1. Separate egg whites and yolks in two bowls
2. Mix the whites and yolks using a mini electric single wire whisk shown follow: (this is very important for yolks since it is hard to roll after cook if you don’t mix it enough)

3. Add ham dices to white mixture.
4. Add minced scallions to yolk mixture.
5. Heat the pan and cover the pan using a thin layer of cooking oil
6. Pour the white mixture to the pan to form a thin layer, cook at medium heat until it solidifies. You may flip it to cook other side, but it’s not a must. Too thick will be hard to make into rolls.
7. Remove the yellow piece from pan and cook the yolk mixture the same way.
8. Place yellow over white pieces, roll, cut.
You can mix anything that you like with egg before cooking, only is you minced before adding to the egg mixtures.
